Weeknight Broiled Salmon with Lentils

Ingredients
For the Salmon
  • 4 salmon fillets
  • salt
  • pepper
For the Yogurt Cumin Dressing
  • 1 teaspoon cumin seeds
  • 1/2 cup 0% plain greek yogurt
  • 4 tablespoons red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 teaspoon salt
  • water
Instructions
For the Salmon
  1. Preheat broiler
  2. Sprinkle salmon fillets with salt and pepper
  3. Place on baking sheet
  4. Broil for about 8 to 10 minutes, until they turn opaque
For the Dressing
  1. Toast the cumin seeds in a dry pan for 3 or 4 minutes until fragrant. Set aside to cool.
  2. Place yogurt,vinegar and olive oil in a medium bowl.
  3. Grate or press in the garlic.
  4. Add cooled cumin seeds and salt.
  5. Whisk together.
  6. Add water little by little until you reach desired consistency.
To Serve
  1. Place 1/2 cup of Basic French Lentils on four plates.
  2. Place 1 salmon fillet on each plate.
  3. Drizzle with yogurt cumin dressing.
  4. Garnish with parsely (optional)
Recipe Notes

A note about the dressing: Katie from Healthy Seasonal Recipes is very careful to point out in her post that the garlic really needs to be grated or pressed. Diced garlic will be too strong.
