Looking for something unique to serve at lunch or brunch? This Catalàn Flair bowl is a creative salad recipe inspired by a recent trip to Barcelona. Spiralized beets and a healthy romesco sauce are the stars but there's so much more to this bowl of yum.
Catalàn Flair Bowl
A creative salad recipe inspired by the flavors of Catalunya.

Ingredients
  • 2 Tablespoons romesco sauce
  • 1 4 ounce cod filet
  • 2 spring onions washed, halved lengthwise
  • Romaine lettuce
  • 1/2 raw beet peeled and spiralized
  • 2-4 fresh figs quartered
  • 1/4 cantaloupe thinly sliced lengthwise
  • 4-6 oil cured olives
  • shaved manchego cheese
Instructions
  1. Sprinkle cod with salt and smoked paprika.
  2. Grill for 3 to 4 minutes each side until cooked through.
  3. Toss spring onions in olive oil and salt and broil until well charred, about 15 minutes.
  4. Lay a bed of romaine in salad bowl.
  5. Arrange ingredients on top of lettuce.
  6. Shave manchego cheese on top.
  7. Make a small well of romesco sauce along the rim of the bowl for dipping.
