Raw, spiralized carrot noodles with a sweet and spicy goat cheese dressing topped with pepitas and fresh thyme.
Combine goat cheese through milk in a small bowl and whisk until thoroughly combined. I use Mike's Hot Honey but you can also make your own.
Distribute carrot noodles onto four plates and drizzle with goat cheese dressing.
Alternatively you could place all the carrot noodles in a salad bowl, pour the dressing over them and toss to coat.
Garnish with pepitas and fresh thyme.
