A Qué Pasa, NY? is a spicy, bubbly version of a margarita that celebrates Cinco de Mayo, warm weather and the underdog.

Ingredients
  • Salt for rim or smoked chili pepper sea salt
  • 2 oz fresh lime juice
  • 2 oz pineapple juice
  • 1 oz spicy simple syrup*
  • 6 oz reposado tequila
  • 1 bottle prosecco
Instructions
  1. Salt rim of 4 champagne flutes.
  2. Fill cocktail shaker with ice.
  3. Add lime juice, pineapple juice, simple syrup and tequilla to shaker and stir well.
  4. Strain 2 oz of margarita mixture into each champagne flute.
  5. Top with prosecco.
  6. Garnish with fresh pineapple (optional)
Recipe Notes

*spicy simple syrup is made with 4 parts chili infused honey to 1 part water. Combine in small saucepan over medium heat until bubbling. Let cool completely. Will keep in refrigerator for one to two weeks.
