Roasted Miso Glazed Peaches with Ginger Whipped Cream

In this dessert fresh peaches are roasted to heighten their natural sweetness and brushed with miso for a dose of umami. Top with ginger whipped cream for a bit of spice. Serves 4 to 6 depending on portions.

  • 5 fresh ripe peaches pitted and halved, skin on
For the miso glaze
  • 1/4 cup white miso
  • 1/2 cup mirin
  • 1 tablespoon lemon juice
  • 1 tablespoon low-sodium soy sauce
For the whipped cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon ground ginger root
  1. Preheat oven to 375 and line a baking sheet with parchment paper.
Make the miso glaze
  1. Add miso, mirin, lemon juice and soy sauce to a small mixing bowl and whisk until well combined.

  2. Slice each peach half into thirds.
  3. Spread peach slices out on the parchment lined baking sheet.
  4. Using a silicone brush, brush miso glaze onto the meaty topside of each peach slice.
  5. Roast for 10 minutes.
  6. Remove from oven, turn peach slices over and brush glaze onto the other side.
  7. Roast for 5 more minutes.
Make the whipped cream
  1. Beat heavy cream (I use a hand mixer) in a chilled mixing bowl until it forms soft peaks (about 3 minutes.)
  2. Add ginger and powdered sugar.
  3. Beat until stiff peaks form (about 2 to 3 minutes.)
  4. Refrigerate until serving.
Recipe Notes

Best served warm so the whipped cream melts a bit and mingles with the peach juices.
