Ok who has Spring Fever? *waving wildly* It’s taking a lot of restraint to keep me from packing a bag and hopping a flight to someplace warm and sunny. As I’m writing this post there’s snow coming out of the sky and the grey grayness of it all is just such a drag. Luckily, I’ve been recipe testing this Island Bunny cocktail every night to have it ready in time for Easter. So if, like me, you’re not into marshmallows or jelly beans, this Easter cocktail has your name all over it. And it’s Caribbean flair will remind your taste buds that warm weather is on its way.
Speaking of warm weather, Bom Bom’s Nilli Vanilli flavor which is the base of this delightful Easter cocktail contains less than 100 calories per serving. So we can sip away (responsibly of course) and still rock our island bunny bods.
I think my Catholic school upbringing caught up with me when I was developing this Easter cocktail because there’s a little symbolism involved here. Please indulge me.
The Bom Bom Nilli Vanilli Base
Why It Works: So sweet and creamy. Delicious over ice. Goes down super smooth. A delicious combination of premium Caribbean rum, almond milk, and other all natural flavors. Vegan, Dairy Free and Gluten Free.
How It’s Symbolic: It’s off white color reminds me of an artist’s blank canvas. And so does Spring. In many ways, Spring feels more like the beginning of a new year to me than January.
The Egg White
Why It Works: That foamy froth takes this drink waaay into dessert cocktail territory. It’s basically an alcoholic version of meringue.
How It’s Symbolic: Eggs = rebirth = Easter. Without the funky dyes. ** while Bom Bom Nilli Vanilli is vegan, this cocktail is not due to the addition of the egg white**
The Unsweetened Cocoa Powder “Garnish”
Why It Works: It cuts the sweetness ever so slightly and adds a bit of texture.
How It’s Symbolic: One of the first things I notice when Spring comes around is the smell of the earth. Even here in Brooklyn I can smell it! And that smell fills me with optimism. So the cocoa powder is a nod to the dirt beneath our feet that is on the brink of exploding with life.

Easter candy in cocktail form starring Bom Bom Nilli Vanilli, egg white and unsweetened cocoa powder.
- 6 ounces Bom Bom Nilli Vanilli
- 1 egg white
- unsweetened cocoa powder to top

Place Nilli Vanilli and egg white in a cocktail and shake vigorously without ice (dry shake) for about a minute.

Add an ice cube and shake to chill. About another 30 seconds.

Strain into two chilled coupe glasses.

Dust with cocoa powder.
