This recipe is based on a traditional Italian pasta dish called spaghetti aglio e olio. But I made it healthier by adding less oil than is typically used and tossing in a highly nutritious yet often overlooked superfood, broccoli rabe.
Maybe you’re not familiar with broccoli rabe? This nutty and slightly bitter leafy green is not as well known outside the Mother Country (aka Italy) but deserves a prominent place in your diet. In addition to its nutritional value and taste, there’s very little waste when using this vegetable. After making a slight trim to the bottom of the stem the rest goes right into the pot. Leaves and all.

- 4 Tablespoons high quality olive oil, divided (3 Tbs + 1 Tbs)
- 6 (medium) to 8 (small) cloves garlic, sliced thinly
- ¼ teaspoon red chili flakes
- ½ bunch (9 ounces) fresh broccoli rabe, washed and ends trimmed
- Pine nuts to top (optional)
- Grated Parmigiano Reggiano (optional)
