This summertime side dish is beyond easy. Raw, spiralized carrot noodles drizzled with a sweet and spicy goat cheese dressing garnished with pepitas and fresh thyme.
Summer is nigh. Which means my spiralizer is primed and ready to bring raw, vegetable goodness (like those carrot noodles up there ^) into my life at any given moment. Having the benefit of veggies without generating any heat in my kitchen? Priceless.

I’ve been spending a lot of time making videos for my tea infused smoothie recipes lately. Which means my blender and I have been enjoying a lot of quality time together.
Kitchen appliance envy is real, folks.
Poor thing. I scooped it up (brushing off a little dust I’m ashamed to say) and put it right to work creating this simple carrot noodles recipe with a tangy, sweet and spicy goat cheese dressing.
My fridge is literally the worst. It does the bare minimum one may require from a fridge, it keeps food cold. But it’s small and the shelves aren’t solid and the drawers fit barely a head of broccoli and I hate it.
But, fridge aside, I love all the things in my kitchen (some of which are verrrry old) that help me put simple, healthy food on the table.
And my Paderno spiralizer is no exception.
The number of vegetables you can enjoy raw increases exponentially with a spiralizer. These carrot noodles would be impossible without one. Well, you could julienne them but that is a lot more work.
And I am all about taking the easy route.
Especially in the summer.
Here are a few things that might help you make this at home.

Raw, spiralized carrot noodles with a sweet and spicy goat cheese dressing topped with pepitas and fresh thyme.
- 2 to 3 raw carrots peeled and spiralized
- 2 ounces goat cheese
- 1 Tablespoon hot honey
- 3 teaspoons apple cider vinegar
- 1/2 Tablespoon fat free milk
- pepitas and fresh thyme to garnish
Combine goat cheese through milk in a small bowl and whisk until thoroughly combined. I use Mike's Hot Honey but you can also make your own.
Distribute carrot noodles onto four plates and drizzle with goat cheese dressing.
Alternatively you could place all the carrot noodles in a salad bowl, pour the dressing over them and toss to coat.
Garnish with pepitas and fresh thyme.
